Quinoa, it’s the new super food. Or old super food. I put a wee little bit of adobe pepper in mine because a.) I’m stupid and made a mistake once that worked out okay and b.) I like it a little spicy but not too much. I’m getting old and so is my digestive system.
This is not a one pot meal but maybe just a pot and a baking dish if you’re really careful and neat. I’m not. I think I had enchilada sauce on the ceiling, on the cat and on the neighbor lady.
The recipe calls for avocado. I don’t like avocado but you probably do so go ahead and add it.
Not sure what is Buffalo about this. Are we supposed to use buffalo meat? Is it from Buffalo? Should we have some chicken wings with it? Does the city of Buffalo even, really exist or is it a figment of our collective imagination? We’ll never know then, will we?
We’ve talked before about how we use these recipes as a kind of guide rather than an exact instructional manual. Never so true as with this recipe. We didn’t have any cocoa, lime or cilantro but it was still good. Your results may vary and yes, there are a veritable buttload of ingredients.
Quinoa Chili is not some long haired hippie food. It’s real food. And it’s pretty damn good. Dude.
